Flour Tortillas
Soft flour tortillas to wrap pretty much anything in.
- 250g White bread flour
- 4 tblspn olive oil
- Pinch of salt
- ~130ml warm water
Method
Mix the flour, salt and oil in a bowl and slowly add the water, mixing to make a sticky dough.
Knead the dough until smooth and springy, then leave to stand for 10 minutes.
Cut the dough into 8 pieces and form into balls with hands. Leave the balls to sit for a few minutes.
Heat a dry frying pan to a medium high. Roll each ball into a very thin tortilla. Best way to do do this is to roll from the centre out, rotate the dough 45 degrees and roll again. Keep rolling until very thin.
Place the tortilla in the dry pan and wait for bubbles to form on the surface, should take about 30-45 seconds. Flip and cook for a further 10-20 seconds.
Keep between two plates until needed, this way they steam a little and get nice and soft.
