Spiced Rice
This is a good rice as a side but you can add chickpeas to it to bulk it out into a main.
- 200ml Rice
- 400ml Vegetable Stock
- 2 tbsp oil
- 1 Red Onion
- 2 Cloves Garlic
- 1 Cinnamon Stick
- 2 Cloves
- 1 Cardamom Pod
- 1/2 tspn Chilli Flakes
- 1/2 tspn Turmeric Powder
- 1/2 tspn Cumin Powder
- 1/4 tspn Black Pepper
- 1/4 tspn Cinnamon Powder
Method
Dice onion and start sauteing in the oil in a pan.
Once translucent add the garlic and cook a couple of minutes.
Add the spices and allow to cook for a short while, then add the stock and bring to the boil.
Add the rice and stir so it is all covered with stock.
Cover and simmer gently until liquid is absorbed, then remove from heat and let stand covered for 10 minutes.
