Saag Aloo
- A big Potato
- An Onion
- 3 Cloves Garlic
- 1/2 tspn Mustard Seeds
- 1/2 tspn Cumin
- 1/2 tspn Turmeric
- 1/2 tspn Chilli Flakes
- Enough Baby Leaf Spinach
Method
Peel and chop the potato into roughly 2cm or smaller cubes.
Dice the onion and saute until soft, then add the potato and cook for a couple of minutes.
Add the chopped garlic and cook a couple of minutes longer.
Add the spices and stir to coat, season with salt, then add a good splash of water, stir and cover. Leave to steam for 10 - 12 minutes, keeping an eye to make sure it doesn't dry out and burn.
Once the potato is cooked through turn to a low heat and add the spinach, covering again and letting wilt.
Stir and serve.
